Baked Fish

This has become  great healthy quick meal.  We are trying to eat a little healthier this year, not  lot of red meat, or pork unless we can get it organic. We are gonna be slowly exploring the idea of eating more Paleo diet. This recipe is also an easy Feingold stage 1 recipe.

4-6 fillets of Tilapia (1fillet is 1 serving)
1/3 cup of lemon juice
1/3 cup of melted Earth Balance Soy free butter (It's in a red container, vegan, gluten free)
Seasonings of your choice ( I use minced onion, garlic, oregano, black pepper, sea salt)
4 Yukon golden potatoes
2-3 cups of veggies of your choice (I like to use mixed veggies, or whatever is fresh)


1. Preheat the oven @ 450 degrees. Take a 13 X 11 baking pan, line with tin foil enough.
2. Mixed the lemon juice, melted butter, seasonings.
3. Diced up the 4 potatoes
4. Place the fish fillets, pour the lemon juice/butter over them, then the mixed veggies, then diced  
    potatoes, cover with tin foil.
5. Cover for 30-45 minutes, till the potatoes are soft.
